Strawberry season is back which means it is time to start making strawberry jam. Personally, I’ve only started enjoying jam since I make it compared to store bought ones. Homemade jam is not overly sweet (I can control the sweetness), has no added preservatives and tastes best in season. Here, I’ve paired my Jam with Peanut Butter to make the classic American PB&J. But it’s a great addition to Granola along with yogurt or even to make Jam Biscuits.

Servings: 1 small jar
Ingredients

- 300 gms fresh strawberries (chopped) (best if they are locally grown)
- 25 gms sugar (I’m a less of a sweet tooth but you can taste and adjust the sweetness)
- ½ tsp cinnamon powder
- ½ tsp vanilla extract
- Juice of half a lemon
Method
- Chop up the strawberries to your liking – if you want the jam a bit chunky, you can leave slightly bigger pieces
- Heat a non-stick pan and add the chopped strawberries, cinnamon powder and sugar and let it melt on low heat.
- The strawberry should start boiling and releasing water. Increase the heat and let the mixture reduce to about half the quantity.
- Once reduced, turn off the heat and add the vanilla extract and lemon juice and mix.
- Let it cool so it thickens up a bit more and enjoy!
