Purple Cabbage Salad

I’ve lately been in an experimental phase to try healthy and delicious cooked salads and prove to my husband that salads aren’t boring. He isn’t much of a salad person and is my biggest critic so it was a surprise when he gobbled this up in minutes. I haven’t come up with this recipe but nonetheless I found it really intriguing and definitely one I would make again with the remaining of the purple cabbage. It’s sweet, it’s crunchy and surprisingly very delicious and a great alternative to purple cabbage coleslaw. I hope you give this a go and be as satisfied as i was to try something new.

Ingredients

  • Roasted Cabbage (see below) – Quantity depends on size of the cabbage. I’ve used ⅓ of the cabbage, but if it’s a small cabbage, maybe half?
  • 2 tbsp Roasted nuts – I’ve lightly roasted mine in a pan (you can use pre-roasted nuts as well) and used pecans, cashews and pistachios but you can also use almonds, walnuts as well
  • 2 tbsp olive oil for roasting
  • 1 chopped date
  • 1 tbsp chopped coriander
  • Salad Base:
    • 80 gms Greek yogurt (thick and full fat please!)
    • 1 tbsp tahini
    • 1 clove garlic (minced)
    • Salt and pepper to taste
  • Salad Dressing:
    • 1 tbsp olive oil
    • 1 tsp honey
    • 1 tbsp balsamic vinger
    • Salt, pepper and chilli flakes to taste

Method

  1. Pre-heat the oven at 175 degrees Celsius
  2. Cut the Purple cabbage into thick chunks
  3. Brush olive oil over mixed with salt and pepper over the purple cabbage ensuring you brush it all over each piece
  4. Roast the purple cabbage in the oven for about 40-45 minutes or until properly charred

5. While the cabbage is roasting, mix all the ingredients of the salad base (Greek yogurt, tahini, minced garlic, salt and pepper) until there are no lumps

6. Mix all the ingredients of the salad dressing (olive oil, balsamic vinegar, honey, salt, pepper and chilli flakes) and keep aside

7. To assemble the salad, spread the salad base on a tray and place the roasted cabbage on top

8. Top with the chopped and roasted nuts, chopped dates, salad dressing and chopped coriander and Enjoy!
